As this is the 11th hour of the Daring Baker’s November Challenge – cannolis – i am going to do this post mostly in photos – that’s the best part anyway – no?

rolling the dough through the kitchen aid - apparently essential with such hard dough

getting thinner

ahh - i can see the light!

check on the oil temp

cutting out rounds with a cookie cutter tin lid

mom (was so excited to hear that cannolis were on the menu - she insisted we do them together) works away

mom wraps the first one ...

and it goes into the oil

...and it pops right open
and the next 5 or so do too

in true capricorn spirit, i decide there is no way a cannoli shell will get the best of us and i start a sealing process - PINCHING.

take that oil bubbles! lets GO!

mom also starts holding them down ...

and success looms near!

and we start cranking them out

and they start stacking up!

and we have a little photoshoot

...well, wouldnt you have done the same?!

then mom gets a little silly ...

yep, she's goofy ...

..and another close-up

and work begins on the dipping chocolate

and the dipping commences ...

aww so pretty

dipped and good to go

chocolate also goes into the filling

complete with pistachios, cinnamon and rose water!

piping into the dipped shells

all filled and delicious!!

All done!
Thanks for all your help mom – glad we got to bake together!

What a lovely post adore all the photographs and it is so nice when you can bake with family (especially you mum) and the photo series really shows the process so well. And the filling of chocolate with pistachios, cinnamon and rose water! sounds delicious. And your cannoli shells are so blistered well done. Bravo and well done on your final results. im glad that mom assistance didnt go against the rules – i didnt even think about that before we started – but it was great and way more fun than doing them myself! She’ll be happy to hear all your thoughts too – thanks again!

oh i dont know how we would have done it with out the pasta machine – just rolling the dough thin enough to get it through the pasta machine was a task!

I love the fact that you did it with your mom – that’s sooo cute! And I love the pictures – the on line tutorial was great – I also experienced some of them opening – great tip on the pinching!

we originally forgot the egg to help seal too
— the pinching worked out well – though the seam you can see in some of the done ones doesn’t look too traditional – oh well

Omg your mum is so cute =D Whenever mum sees me doing my DBC, she steers away from the kitchen. Sometimes I think a picture speaks a thousand words, great idea doing a photographic post, gives people an idea what to expect.
